William's Classic is our flagship medium roast — a blend designed to be the most versatile coffee in our lineup. It's named after William because, like him, it's curious and adaptable: great in any brew method, at any time of day, and welcoming to any kind of coffee drinker.
This blend brings together dense, high-altitude coffees from East Africa and Central America. The combination produces a remarkable range of flavors depending on how you brew it. Lighter extractions bring out bright citrus and snappy acidity, while longer, darker brews reveal deep bittersweet chocolate and caramel notes with a satiny mouthfeel.
At the core is a syrupy sweetness — raw sugar and toffee flavors that persist no matter how you prepare it. There's a confluence of tangy dark chocolate and citric bite that creates complexity without being overwhelming, finished by a bittersweetness that lingers pleasantly.
The blend uses predominantly washed (wet process) coffees, chosen for their clarity of flavor, though we may occasionally incorporate honey-processed lots when they complement the profile. All origins are high-grown at similar altitudes, which helps ensure even roasting — something that can be especially tricky with pre-blended coffees.
This is a true all-rounder. It shines as a pour-over or drip coffee, where its citrus and sugar notes open up beautifully. But don't overlook it for espresso — the syrupy body and bittersweet chocolate make it a fantastic base for milk drinks like lattes and cappuccinos. For French press, expect the fuller body and caramel sweetness to really come through.
